Truck is running fine, except for when I try to accelerate quickly, it stumbles in all gears.
If I short shift, I can get up to 80mph with no trouble, idles smooth.
No codes are being thrown and the MAS seems to be fine ( I plug the little hole and the truck dies)
I can run the a/c and idle fine. It started doing this while I was on a long trip, then the trans fried. It even melted 5th gear to the shaft and killed the speed sensor! somehow it sucked a gallon of water in the day after I got new tires and an alignment.

I replaced the trans, and it was working fine last night. Now it has come back again.

What would cause it to die? is there a secondary timing profile? it revs freely in neutral, only under load does it die, and always after part throttle. fine around town.

Replaced the fuel filter??? Try cleaning the fine wires of the MAFS w/ some gentle brake parts cleaner or electrical contact cleaner. Have you been using a Genuine Nissan oil impregnated air filter??? Check all engine grounds for corrosion and tightness.
